My oven stopped in the middle of a self-clean and the door is locked.
That is the latch doing its job — the cavity may still be dangerously hot. Do not force it. It is a common call, it is usually the latch or what drove the cycle, and releasing it safely is part of the visit.
Everything I bake is coming out underdone.
Usually the oven sensor rather than the element, and it is the cheaper of the two. A sensor reading a few degrees high tells the oven it is hotter than it is, and the oven duly stops heating early. It is measured as a resistance at a known temperature, so it is a definite answer rather than an opinion.
The thermal fuse has blown twice now.
Then the fuse is not the problem — it is the symptom, and it is doing what it is there for. Something is driving the cavity too hot, and finding that is the repair. A third fuse without that is money spent on the same afternoon again.
