Measure what it is actually doing
At the shelf, over a whole cycle rather than a single reading. An oven that is out by a consistent amount and one that swings wildly are different problems, and only one of them is a sensor.

Read the sensor as a resistance
At a known temperature it either matches its curve or it does not, and there is nothing to judge. It is a modest part and the commonest cause of an oven that is out but working.

Test the elements under load
A continuity test passes on an element that has lost most of its output. Current under load is the test that tells the truth — and on a convection oven the third element around the fan is checked with the other two.

On gas cavities, the igniter
A weak oven igniter glows and never draws enough current to open the gas valve, which is an oven that heats slowly, then intermittently, then not at all. It is measured rather than judged by eye.

An oven has two ways of being wrong about temperature: it can fail to make it, or it can fail to know it. The first is an element or an igniter, the second is a sensor, and they produce complaints that sound the same on the phone. That is the whole reason this visit begins with a thermometer at the shelf rather than a part in a hand.
What actually goes wrong
- The oven temperature sensor, drifting rather than failing.
- The bake or broil element, and on convection ovens the element around the fan.
- The oven igniter, on gas cavities — weak long before it is dead.
- The relay on the control that drives the element, which is a board repair wearing an element costume.
- The convection fan, which makes an oven cook unevenly rather than not at all.

Two candidates, told apart by measuring. If an element is only partly working — or one of two is dead on a convection oven — the cavity climbs slowly and stalls. If the sensor is reading high, the oven believes it has arrived and stops heating early. Both feel identical from the kitchen.
My oven is thirty degrees out but it works.
Almost always the temperature sensor drifting rather than failing, and it is a modest part. Some of these also have a calibration setting that can be adjusted, which is worth checking before anything is replaced.
The burners work and the oven does not. Is that one repair?
One visit, two systems. The cooktop and the oven cavity are separate circuits with separate parts even on an all-gas range, so a dead oven says nothing about the top. Tell us which half when you book and we will bring the right parts.
